We are going through the I don’t like strangers stage now.  When Aubrey realizes some one else is holding her the big crocodile tears come out.  She is finally getting some cute chunky legs you just want to squish her.

Happy Easter

The weather was so horrible out side the Easter Bunny had to hid the eggs inside this year. The Easter Bunny did a really good job, I am still finding eggs today.   Haley was delighted to get her first Webkinz in her Easter basket, she got a little pig and her name is Pinky.  Payton got a hippo and I am not sure what she decided to name hers.  They love to  spend hours playing with their Webkinz on my laptop.  Aubrey had some fun slobbering on all the Easter eggs for her sister.

Paul’s Shop

Since the big red truck has been gone Paul has pulled in the Motorcycles and four wheeler.  He is fixing up his Honda dirt bike and changed the plastics on the little 50 four wheeler from yellow to white.  This used to be my four wheeler when I was a kid so it has been around for a while.  Haley it glad that is all done and is ready to ride again!

Banana Cupcakes with Honey-Cinnamon Frosting

I made these cupcakes last week and every one really enjoyed them!

11/2 cups all-purpose flour (spooned and leveled)

3/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soada

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, melted

11/2cups mashed bananas (about 4 ripe bananas), plus 1 whole banana, for garnish

2 large eggs

1/2 teaspoon pure vanilla extract

Preheat oven to 350.  Line a standard 12-cup muffin pan with paper liners.  In medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Make a well in center of flour mixture.  In well, mix together butter, mashed bannanas, eggs, and vanilla.  Stir to incorporate flour mixture (do not overmix).  Dividing evenly, spoon batter into muffin cups.

Bake until a toothpick inserted in center of a cupcake comes out clean,  25 to 30 minutes.  Remove cupcakes from pan; cool completely on a wire rack.  Spread tops with Honey Cinamon Frosting.  Just before serving, peel and slice banana into rounds, and plae on each cupcake.

Honey Cinnamon Frosting

In a medium bowl, using an electric mixer beat 11/4 cups confrctioners’ sugar, 1/2 cup (1 stick) unsalted butter, room temperature, 1 tablespoon honey, and 1/8 teaspoon ground cinnamon until smooth, 4 to 5 minutes.



Four Month Picture

These are Aubrey’s four month old picture. She has changed allot since last month and she was allot happier for these pictures, so we got some good ones this time. Next month I am going to have all three of them get their pictures.

Four Months Old

Aubrey had her four month old check-up today.  She weighed in at 13lbs 40z, she has dropped down in the 37% for weight but for head circumference she is in the 89%.  The doctor is going to keep an eye on her weight for know and see what happens next month.  In this last month there are been many milestones, she can now roll over from her stomach to her back and is close from her back to her stomach, she has started talking and spitting, can now hold things with her hands and grab and pull hair, sits up with help of course, started eating rice cereal, and is teething like there is no tomorrow.  She had to get three shots today so that was really sad I hate having to take her for those darn things.  The doctor says she looks healthy so we have allot to be thankful for.

Yummy Food!

Aubrey has started eating rice cereal last Thursday.  She really likes it so far when you take the spoon away she starts to fuss.  I really don’t know how much food she gets in her belly but every day she gets a little better.  I am sure it’s just the beginning of some giant messes.
